Chocolate Snowballs

I first made these when I was in school and I still have the recipe!  I have treasured it because they always go down a storm when I give them as gifts.  To be honest, they can be made all year around, but they do have a snowball quality to them which makes them seasonally appropriate. 

 

They are similar to a well known ‘bountiful’ coconut chocolate bar, so if you are a fan of them, then these will be right up your boulevard.

 

The recipe only calls for a few ingredients and it makes approximately 26, so great for bundling up with a ribbon to give as an edible gift.

 

CHOCOLATE COATED SNOWBALLS

 

200g desiccated coconut

100g icing sugar

200g condensed milk

250g dark chocolate (the best you can get)

  • Line a large baking sheet or tray with baking paper

  • Mix the coconut and icing sugar in a large bowl until combined, pour in the condensed milk and mix until well combined.

  • Take about a teaspoon of mixture and roll in between your hands, until you have a small ball and set to one side whilst you make the rest - until the mixture is used up.

  • Break the chocolate up into small chunks and put into a heatproof bowl, set over a pan of simmering water - making sure the base of the bowl doesn't come in contact with the water.

  • Slowly melt the chocolate and then take off the heat and allow the chocolate to cool slightly, so it is thicker, but still runny.

  • Take one of your small ‘snowballs’ and drop it into the chocolate, using a fork, turn it around until it is totally covered.  Use the fork to lift the ‘snowball’ out of the chocolate and allow any excess chocolate to drip off back into the bowl before transferring to your prepared baking paper.  Repeat with all the other snow balls.

  • You can choose to sprinkle them with more coconut or any sprinkles you fancy, but whilst the chocolate is still melted. Allow the chocolate to set before keeping them in the fridge.

 

As I said at the beginning, I made these at school, so this is a fun one to do with kids - if a little sticky. Leave the chocolate melting to the adults though.
