Celebrations and French Toast


Hooray what a super week - it was my birthday this week, it was my sister's birthday the day after, my friend had a lovely wedding celebration and it’s a bank holiday weekend here in England. So lots of lovely things happening!

For a celebration breakfast, I decided to go for french toast with berries. The bread is soaked in milk, flavoured with cinnamon and nutmeg, along with egg, and then fried in butter - heaven!

For those who have been reading my blog for a while, you will know how much I LOVE cinnamon - particularly a hot cinnamon. After a bit of research and many cinnamon trials later, I discovered that one of the most intense cinnamons comes from Indonesian. Excitingly, I found such a packet on a recent trip to Whole Foods in London.

French Toast

4 slices brioche

2 large free ranged eggs

2 tsp ground cinnamon

1/4 tsp grated nutmeg

1/2 tsp vanilla extract

40ml milk

1 tbsp caster sugar

20g butter (for frying)

Optional: Maple syrup and fresh strawberries for serving.

  • In a small bowl mix together the spices and sugar, then add the eggs, milk and vanilla and whisk together.

  • Heat the butter in a frying pan. Then dip the slices of bread in the eggy mixture on both sides and then fry in the pan until golden brown and then flip it over and fry the other side until also golden brown. Repeat this with all slices of bread.

  • Serve with a drizzle of maple syrup and some fresh strawberries.

Delicious with a big cup of fresh coffee - in fact I might go and whip up another batch of french toast…well it is my birthday after all!
