We have bonfire night happening in the UK this weekend and I can’t wait! I grew up in Lewes, Sussex which always goes to town with brilliant bonfire celebrations and fireworks. It is so much bigger than when I was little, but the atmosphere there and at Battle bonfire night is electric.
A classic bonfire treat tradition is the sweet and fruit toffee apple, a whole apple incased in a shiny, red, hard, toffee shell. To give this time-honoured delight a twist, I have switched the toffee for chocolate and salted caramel.
These are so tasty and quick to make, especially if you already have a jar of salted caramel in the fridge. I use this sauce a lot in my blog recipes, so if you haven't tried this yet, please let me urge you to give it a go! (recipe here)
Bonfire Night Chocolate Caramel Apple Lollipops
200g good quality milk or dark chocolate, roughly chopped
50g salted caramel (recipe link above)
50g pecan nuts, toasted and roughly chopped
8 bamboo skewers
Line a baking sheet with greaseproof paper.
Place a chocolate into a medium bowl and suspend over a pan of simmering water, don’t let the bottom of the bowl come in contact with the water. Slowly melt the chocolate, stirring occasionally.
Meanwhile, slice each of the apples (vertically) into four pieces, 8 slices in total and slide a skewer into the base.
Once the chocolate has melted, dip each piece of apple into the chocolate - covering both sides and then lay onto the greaseproof paper. Sprinkle over the chopped pecan nuts and drizzle with salted caramel. Transfer to the fridge to set completely and then enjoy!
