New Year Energy Bites
Happy New Year! This is where all the best intentions begin and it's such a good opportunity to flow with this collective momentum to make changes in your life too.
Last year I started running again and managed to keep it going…more's the miracle! I must say though that I am still a reluctant runner and am not jumping out of bed with a spring in my step to get started. I am more of a ‘talk myself into it’ for 10 minutes with my mini mantra of 'No is not an option!’. I know it is good for me, even if it doesn’t feel that way!
In this spirit I am sharing this recipe for energy bites. When playing about with the ingredients for this, my main objective was that they had to taste good. All too often, the things that are good for you don’t always taste great…but not in this case!
I was reading that some runners like to eat an energy snack to keep them going, although I imagine these energy bites are not exclusive to runners and would be great for anyone who needs a boost in the afternoon.
The mixture of nuts and unrefined sugars is ideal and makes the whole thing taste amazing.
Energy Bites
100g shelled hazelnuts, lightly toasted
80g dried dates, de-stoned
2 tbsp peanut butter (try and find one without palm oil if you can)
1 tbsp agave syrup
1 tbsp cocoa powder
Whizz the hazelnuts in the food processor until they are a breadcrumb texture.
Add all the other ingredients and blitz again until the combine together.
Mould the mixture into balls about the size of a golf ball and then leave in the fridge to chill and become firm
Please don’t think that I am on any kind of diet or ‘clean’ eating mission - I had scrambled eggs on sourdough toast for breakfast! This is all about boosting your energy in a tasty way.
